Fast Breakfast Recipes for Your Children

We've all heard breakfast is the most important meal of the day however it can be extremely difficult to remember during the rush of getting out the door in the morning. Below are some healthy and quick grab and go breakfast options that will help your children feel energized until lunch time. So skip the chocolate donut or the drive thru line and whip out some of these quick and easy recipes to get your child's day off to a great start.

 

1. Smoothies

Breakfast shakes are one of the easiest and most versatile breakfast options to take on the go. There are an infinite number of ingredient choices for your smoothie from peanut butter, banana, and almond milk  to spinach, juice, and frozen fruit. You can even ditch the start and go for a thicker option like a smoothie bowl. One of the best things about smoothies is that you can sneak in some veggies and your kids will hardly notice.

 

2. Overnight Oats

Overnight oats are another easy grab and go option for your morning and are just as versatile. The base recipe includes rolled oats, milk,greek yogurt, honey or syrup and vanilla extract all put together in a mason jar and then refrigerated overnight. In the morning you'll have a hearty and delicious breakfast. You can throw in some peanut butter and cocoa powder for a nice chocolatey flavor or some coconut, mango and pineapple for a fun tropical option.

 

3.  Breakfast Sandwiches

For an egg and sausage muffin, you can simply assemble 12 at a time and stick them in the freezer to be microwaved quickly during the week. Below is a simple recipe that will rival those drive-thru sandwiches.

 

Sausage and Egg Breakfast Sandwich

Ingredients:

  • Eggs

  • English Muffins

  • Pre-Cooked Sausage Patties or Canadian Bacon

  • Cheese(optional)

  • Cooking Spray

 

Recipe:

  1. Spray a muffin tin with non-stick cooking spray. Crack one egg into each slot, pop the yolk with a fork and season with salt and pepper. Bake at 375° for 10-15 minutes or until set.

  2. While the eggs bake, toast the English muffins slightly.

  3. Remove eggs from tin and let cool.

  4. Now you’re ready to assemble the sandwiches. Simply place and egg, sausage patty or Canadian  bacon, and a slice of cheese between the English muffin and wrap in wax paper and freeze in a freezer bag.

  5. When you’re ready to enjoy them, remove sandwich from the wrapper, wrap it loosely in a paper towel, and microwave for 45-60 minutes.

 

4. Muffins

Muffins are a great grab and go breakfast and have a multitude of flavors available. There are some really great boxed muffin mixes or you can create your own from scratch. You can create a hearty apple cinnamon and oat muffin or a fun chocolate chip variation. Banana nut and blueberry are always good go-to muffin recipes that give you a nice sweet taste in the morning.



5. Granola Bites

The fiber in granola  is great to start your day since it leaves you feeling full and energized throughout the morning. Below is a fun recipe for grab and go granola bites that can be enjoyed anytime of the day as a great snack.

Chocolate Chip Peanut Butter Granola Bites

Ingredients:

1 cup your choice of granola

½ cup Peanut butter

1 tablespoon honey

Chocolate chips to taste

 

Recipe:

Line tray with parchment paper. Mix all ingredients in a bowl. Roll mixture into small bite-size balls and then place them on the parchment paper. Refrigerate for 1 hour. All that’s left is for you to enjoy.
